Mark is based by the sea in beautiful Myrtleville and works with the bees to produce amazing local honey. We sell this by the jar and use it also in cocktails and throughout our menu.
We buy wonderful aged beef from The Allshire family in Rosscarbery. We also buy bespoke pork breakfast sausages and bacon from their award winning herd and the spent grain from our brewery is used to feed their pigs.
Jane Murphy and her family run the Ardsallagh Goat Farm in Carrigtwohill, County Cork which supplies us with their delicious and award-winning hand-made Ardsallagh Farmhouse Cheeses.
We buy our duck from Helena and her family at Skeaghanore Duck in West Cork. They have built an enviable reputation for the finest quality duck.
We source our small batch proper farmhouse ice cream from Baldwins. They use milk and cream from their family farm combined with free range eggs to make their ice cream. Each small batch is handmade and combined with only the very best natural, ethically sourced ingredients.
We buy marvellous strawberries from the Bushby’s farm in Rosscarbery. They have been growing strawberries for 25 years and supply their lovely product to us when in season.
Coolea Cheese is hand made on the mountain farm of the Willems family in Coolea, Co. Cork. Nothing but 100% healthy fresh cow’s milk is used to produce this high quality cheese, which we use in our French Onion Soup.
Jenny-Rose and Toby make amazing Halloumi, fresh Mozzarella, Ricotta, Smoked Scamorza and more at their dairy in Macroom. We also buy our own mix of olives from their wonderful stall in the English Market.
